Norwegian stitching is a seam, not a welt
This is the single most confused term in shoemaking and the confusion is often commercial rather than accidental.
- Norwegian stitching is a decorative and structural seam on the upper. A separate apron panel, the U shaped piece over the top of the foot, is joined to the vamp edge to edge rather than lapped flat, so the seam stands proud of the surface as a raised ridge.
- Norwegian welting is a construction method under the shoe, related to Goodyear welting, where the upper is turned outward and stitched through the welt for extra water resistance.
A listing that says "Norwegian construction" while showing an apron seam is usually describing the seam and letting you assume the construction. These have the Norwegian apron seam on the upper and Goodyear welted construction underneath, and we would rather name both than blur them.
Why one seam costs what it does
Three ways exist to join an apron to a vamp, and the price gap between them is the price gap on this style.

A machine cannot produce a butt stitch, because the needle has to enter the edge of the leather rather than its face. That is not a marketing claim about handwork being nicer; it is a mechanical limit, and it is why this seam is done by hand or not at all.
The practical consequence for a buyer: slight irregularity in stitch spacing is evidence the seam is genuine. Perfectly uniform spacing on a flat seam means a machine did it.
What a fiddleback waist is, and its one downside
Look at the sole from underneath. The waist is the section between the heel and the ball of the foot. On a flat sole it is the same width as the rest. On a fiddleback it is cut narrower than both the heel and the toe and beveled up to a raised spine running down the center, shaped by hand after the sole is attached.
It does two things: it makes the shoe look narrower and more sculpted from the side, and it stiffens the arch.
The downside is worth stating plainly. Less leather touches the ground at the waist, so it wears through faster than a flat waist, and it wears in the place you cannot see. It also makes resoling slower and more expensive, because rebuilding the fiddleback by hand takes longer than fitting a flat sole. Ask your cobbler before you hand the shoes over, because a shop that has not done one will quietly give you a straight waist instead.
There is a quick authenticity check too: on a genuine hand shaped fiddleback the stitch line follows the narrowing curve. On a pressed imitation the shape is there but the stitching runs straight past it, because a machine cannot follow the curve.
Derby lacing, and why this shape forgives what an oxford will not
A derby has open lacing: the facings carrying the eyelets are stitched on top of the vamp and are free to spread as wide as your foot needs. An oxford has closed lacing, with the facings stitched underneath, meeting in a fixed V.
If you have a high instep, a wide forefoot, or one foot noticeably bigger than the other, a derby is the most forgiving lace up there is. The lacing absorbs a range that an oxford simply cannot, and no amount of breaking in gives an oxford that range.
The trade is formality. Open lacing reads less formal than closed, which is why a derby belongs in business casual and smart casual rather than at the top of a dress code.
Why tan, and what tan asks of you
Tan is the color that shows this seam best. The apron ridge works by casting a shadow along its length, and a light warm leather gives the strongest contrast between the lit top of the ridge and the shadow beside it. On black the ridge is there and you cannot see it; on tan it is the first thing you notice.
What tan asks in return is consistency of care. Light leather shows water spotting and marks more readily than dark, and once a tan shoe has dried unevenly after rain the mark tends to stay. It rewards a protector and a regular cream more than a dark shoe does.
It is also a spring to autumn shoe rather than a year round one, which is worth knowing before you buy.
How these are built
Goodyear welted and hand stitched. A leather welt runs around the upper and insole and the outsole is stitched to that welt rather than glued to the upper, so the shoe resoles repeatedly without disturbing the apron above it. Cork between insole and outsole compresses to your foot across the first month.

A derby is the most forgiving lace up to size, so length and ball girth are the two measurements that decide it. Get those right and the lacing handles the instep.
One detail specific to this pattern: the apron seam should sit behind the widest part of your foot, not across it. A raised seam running over the joint creases hard in the first month and a creased ridge does not stand back up. If you have a wide forefoot, tell us and we will adjust the pattern rather than the size.

What to wear them with
- Strongest: navy, in flannel, hopsack or chino. Navy and tan is the cleanest cool and warm separation there is.
- Works: mid gray, olive and brown tailoring, tweed and heavier odd jackets, dark denim.
- Avoid: charcoal and black, which sit too heavy against a light tan, and a formal business suit, where a derby with a visible hand seam is a step too relaxed.

Care, and the seam specific part
Cream first, then wax, with a tan or neutral cream rather than a brown one, because brown cream on tan darkens it a shade at a time and the shift does not reverse.
The apron seam and the toe split are where cream collects. It dries pale in the stitch channels and outlines the ridge in a lighter tone, which on tan is very visible. Use cream sparingly, then brush along the seam lines with a horsehair brush before it sets, working along the ridge rather than across it so you do not flatten the stitching.
Keep wax to the toe and heel counter. Wax in the apron stitching fills the channels and buries the relief that the seam exists to create. Cedar trees between wearings, a day of rest between wears, dry naturally away from heat, and use a protector on tan before the first wear.
